ABOUT OUR CINNAMON
Sure, cinnamon is a common household name. But all things “cinnamon” are not created equal. In fact, there is a variety of types of cinnamon types, have very different pharmacological profiles.
WHY CEYLON CINNAMON?
Ceylon cinnamon (or, Cinnamomumzeylanicum) is native to Sri Lanka and is the source for what we commonly call “true cinnamon.” This varietal accounts for a very small fraction of worldwide cinnamon production. The bark of “true cinnamon” is thin, fragile and easy to crush. Due to its delicate and smooth taste, and small supply, it is considerably more expensive than other cinnamons. More importantly, it contains negligible amounts of Coumarin, a known blood thinner and potential liver toxin.
WHY NOT CASSIA CINNAMON?
The most common varietal of cinnamon available on the world market is primarily produced in China, known as Cassia cinnamon. It has a strong and harsh flavor with a bark that is quite thick, very rough and difficult to crush. Most cinnamon found in the USA and Canada comes from Cassia. Consumed in small quantities on an occasional basis, it is perfectly safe for human consumption. However, it contains a significantly high level of Coumarin, a potential blood thinner and a liver toxin. So, it is not suitable for regular use in high concentrations.
